Creamy Shrimp & Grits
Recipe serves two
1 Cup yellow Grits (use quality Grits)
¾ lb. peeled & deveined shrimp
3 slices of bacon
1 cup diced onion
½ cup diced red pepper
½ Cup diced celery
½ Cup fresh or frozen corn
1 Cup fresh or frozen sliced okra
1 12oz. can diced tomato – drained
1 C heavy cream
1Tbsp blacken or Cajun seasoning
1Tbsp fresh chopped garlic
4 scallions thinly sliced
1 Cup shredded cheddar cheese
Directions:
Prepare Gritts per package recipe.
Heat large saute pan on medium high and cook bacon until starting to crisp. Add onions, celery, peppers, corn, garlic and blacken seasoning. Saute for 3-4 minutes add remaining ingredients except scallions and cheese. Cook 3-4 minutes until shrimp turn pink and opaque.
Place cooked Grits in bowl and serve shrimp over Grits then top with scallions and shredded cheese.
Note: Great Options are to substitute the okra with shitake mushrooms. Also, can substitute Tasso for the bacon.
